Are you about to tuck into a bowl of beige porridge? Or a lacklustre pain au chocolat?

Breakfast has so much potential for being great and yet, most of us have to put up with pretty bland options.

But not if you’re a Gold Coast resident.

Because Bam Bam Bakehouse is offering up a selection of mad mermaid pastries…coloured with algae.

Blue algae is fast becoming the ‘superfood’ du jour down under and Bam Bam is using it in powder form to colour their croissants. Don’t be put off by the fact that blue algae is actually a type of bacteria found in salt water and large lakes – it’s supposed to be chock-full of protein, B vitamins and iron.

Not only that, but the stuff is also traditionally used to boost the immune system, increase metabolism, taking down swelling and improve digestive health.

Whether it still does that after being baked in a buttery prison or not, however, is anyone’s guess.

Anyway, as if turning these croissants blue wasn’t enough, the bakery has also filled these ultramarine bad boys with pink ‘fairy floss’ cream or white Chantilly.

In other words, they’re peak Instagram fodder.

And, of course, the whole lot is topped off with a hefty amount of glitter and sprinkles.

But creating this kind of beauty ain’t easy.

In fact, it apparently takes the cafe three whole days to create their croissants, which are made from flour and butter especially flown over from France.

However basic they might seem, we want and need someone to recreate these pastry delights over here immediately.
